Melt two tablespoons of butter in the same pan over medium-low heat and add the flour. Use a whisk to stir gently for one to two minutes. Add the chicken stock, increase the heat and keep stirring until the stock thickens. Pour in the cream and thyme, then pour this over the chicken and vegetables.
Steps to make Left over chicken pie:
- For the topping boil the potatoes in salted water until soft. Drain then mash. Stir in the butter, cream and egg yolks. Season with salt and pepper then put aside. This will be spread on top at the end.
- Put some oil or butter in a pan and fry the onion, carrots, celery, pepper, courgette until soft then add the garlic. Cook for about 1 minute.
- Stir in the tomato purée, chopped tomatoes, wine and stock and cook for 15 minutes until its thickened.
- Add the left over chicken (I shredded mine) then season to taste with the salt and pepper. You could also add olives and parsley if you wish. Pre heat oven to 180C/160C fan/gas mark 4.
- Pour filling into an oven proof dish and cover with the mashed potato. Grate some cheese on top (as little or as much as you like) bake in the oven for around 35 minutes until it’s piping hot and the cheese/potato is golden in colour.
- Enjoy with some broccoli on the side and a glass of white wine!
Add the chicken stock, increase the heat and keep stirring until the stock thickens. Pour in the cream and thyme, then pour this over the chicken and vegetables. This is a really good starting off point. The amounts of butter, stock and milk are perfect, but it definitely needs more seasoning. I used a leftover smoked chicken, I also sauteed fresh carrots and celery and added some leftover grilled corn, frozen peas and frozen green beans.
