The ingredients needed to make Sambhar:
  1. Take 1 cup toor dal
  2. Prepare 8-10 cubed pieces Lauki
  3. Take 3-4 cubed pieces Brinjal
  4. Make ready 1 medium sized carrot chopped in circular shape
  5. Prepare 1 medium size radish chopped in circular shape
  6. Take 2 medium size tomatoes chopped in circular shape
  7. Prepare 3 cups water
  8. Prepare 1/2 tsp turmeric powder and salt as per your taste-
  9. Make ready 1/2 tbsp tamrind paste (soak tamrind for 20 min and strain)
  10. Make ready As needed Curry leaves
  11. Prepare 1/2 tbsp sambhar masala
  12. Prepare 1/2 tsp mustard seeds
  13. Make ready 1 red dry chilli
  14. Prepare As needed ghee

It is basically a spicy Lentil Stew with Mixed Vegetables that is served as a side dish with Dosa, Idli, Vada, or Rice. Sambar is made in South Indian homes almost every day and is served at Tiffin Centres and restaurants too. Sambar is a South Indian dish made with lentils, mixed vegetables, tamarind, herbs, spices & a special spice powder known as sambar powder. This spice powder is the key to make a good sambar.

Instructions to make Sambhar:
  1. Boil 1 cup of water in pressure cooker add turmeric powder and salt. Add toor dal, wait for 2-3 whistles on medium flame.
  2. Open the lid when pressure is released and mash properly cooked dal smooth with the help of spoon. Add all chopped vegetables, few curry leaves, 1 cup water,salt and little turmeric powder in the prepared dal. Wait for 1-2 whistles on medium flame. - Once pressure is released add sambhar masala, tamrind water and boil for 2-3 minutes.
  3. Heat ghee in pan add mustard seeds, curry leaves and red dry chilli. Give your sambhar a fantastic tadka and serve hot with Idli, Dosa or vadas.
