- Roll up pastry, jelly roll style. I use the wax paper to roll it up, and twist up the ends so it looks like a package.
- Put pastry roll in freezer for at least 15 minutes to firm up just a bit.
- Remove from freezer and slice. I like mine thinner so I go just under 1/2 inch. If anything falls out of the slice, when you place it on your baking sheet just stuff it back in the swirl.
- Place swirls on a baking sheet lined with parchment paper. (This helps with clean up, and makes the bottoms crisp up nicely).
- Brush top of swirls with egg mixture.
- Bake for 14-16 minutes or until golden brown.
- Best when served warm but still tasty when served after they have cooled.
- TIPS: can use turkey bacon, or omit bacon for a meat free option. Also can add diced pimentos for contrasting color. - - I usually get 20-24 swirls out of one sheet of puff pastry, depending on how thick I cut them. - - If they are hard to cut, wrap them back up and throw them back in the freezer. They are easier to cut when partially frozen.
